Instructions

Preparation

  • Begin by heating olive oil in a large skillet over medium-high heat.
  • While the oil heats, season the salmon fillets generously with salt, pepper, and lemon zest.
  • Toss the asparagus in salt and pepper, then add it to the hot skillet. Sauté for about 4–5 minutes until bright green and tender. Remove and set aside.

Cooking

  • Introduce the unsalted butter to the skillet and let it melt.
  • Carefully place the salmon fillets skin-side down in the skillet. Cook for about 3–4 minutes on each side until golden crusted and flaky.
  • Stir in the minced garlic during the last minute of cooking and cook until fragrant, about 30 seconds.
  • Swirl in the lemon juice around the salmon, creating a delightful sauce.
  • Return the cooked asparagus to the pan, tossing gently in the garlic sauce.
  • Plate the garlic butter salmon and asparagus; optionally top with chopped parsley.
