Instructions

Preparation

  • Preheat your oven to 400°F (200°C) for roasting the asparagus.
  • Place the trimmed asparagus on a baking sheet. Drizzle with olive oil and season with salt and black pepper. Toss to coat.

Cooking

  • Roast the asparagus for about 10 minutes, until tender and slightly caramelized, then let cool slightly.
  • In a bowl, toss the halved cherry or grape tomatoes with olive oil, salt, and pepper.

Assembly

  • On a serving plate, artfully arrange the roasted asparagus and seasoned tomatoes.
  • Tear burrata into pieces and scatter over the salad.
  • Sprinkle toasted pine nuts over the top and scatter fresh basil leaves.
  • Finish with a drizzle of balsamic vinegar and extra olive oil if desired.

Notes

Choose firm and bright green asparagus spears. For extra flavor, add garlic cloves or lemon zest to the olive oil. If burrata isn't available, substitute with fresh mozzarella.
