  • 1 loaf 1 round rustic bread loaf (bread boule) Choose a loaf that’s firm enough to hold its shape.
  • 12 oz 1 wheel of brie (about 12 oz, triple cream recommended) The soft, creamy texture enhances the richness.
  • 0.5 cup 1/2 cup whole berry cranberry sauce Adds sweetness and texture.
  • 2 tablespoons 2 tablespoons fresh thyme leaves Adds depth and earthiness.
  • 2 tablespoons 2 tablespoons extra virgin olive oil Enhances flavor and provides a luscious finish.
  • to taste Kosher salt, to taste Elevates flavors.
  • to taste Freshly ground black pepper, to taste Adds warmth and complexity.

Instructions

Preparation

  • Preheat the oven to 350°F (175°C).
  • Slice off the top quarter of the bread loaf and hollow out the inside.
  • Make cuts around the outer edge of the bread for easy dipping.
  • Brush the inside of the hollowed-out bread with olive oil and season with salt, pepper, and half the thyme.
  • Place the brie in the hollowed bread, add remaining thyme, and spoon cranberry sauce on top.
  • Replace the top of the bread and place on a baking sheet. Bake for about 20 minutes or until the brie is melted and the bread is warm.
  • Serve immediately, with toasted scooped-out bread pieces on the side.

Notes

For added flavor, mix crushed garlic or walnuts with thyme. Optional: Add sliced apples or pears on top for contrast. To save time, use store-bought brioche or focaccia.
