Casserole Ingredients

  • 1 pound lean ground beef can substitute with ground turkey or chicken
  • 8 medium flour tortillas or use corn tortillas for a gluten-free option
  • 1 can refried beans black beans can be used for variation
  • 1 cup salsa preferably chunky for extra texture
  • 2 cups shredded cheddar cheese feel free to mix with other cheeses
  • 1 cup shredded Monterey Jack cheese can substitute with Pepper Jack for added spice
  • 1 packet taco seasoning choose your favorite brand
  • 1 small chopped onion adds flavor to the beef mixture
  • 2 cloves minced garlic for additional flavor
  • to taste sour cream for topping
  • to taste chopped fresh cilantro for garnish

Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet over medium heat, brown the ground beef until fully cooked.
  • Add the chopped onion and minced garlic, cooking until fragrant and the onion is soft.
  • Stir in the taco seasoning with 1/4 cup of water, allowing to simmer until the mixture thickens.
  • Spread a thin layer of salsa on the bottom of a 9×13-inch casserole dish.

Assembly

  • Layer two tortillas over the salsa.
  • Spread half of the refried beans on top, followed by half of the beef mixture.
  • Sprinkle a handful of cheddar and Monterey Jack cheese.
  • Repeat the layers with the remaining ingredients, finishing with tortillas topped with salsa and cheese.

Baking

  • Cover the dish with foil and bake for 20 minutes.
  • Remove the foil and bake for another 10 minutes, until the cheese is golden and bubbly.

Serving

  • Garnish with sour cream and fresh cilantro. Serve warm.

Notes

You can make this in advance and keep it in the refrigerator. Leftovers can be refrigerated for up to three days or frozen for up to three months. Consider adding bell peppers or corn for extra flavor.
