Instructions

Preparation

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, toss the peeled and cut carrots with olive oil until well-coated. Season with salt and black pepper to taste.

Cooking

  • Spread the seasoned carrots on the lined baking sheet in a single layer.
  • Roast the carrots for 20-25 minutes, flipping halfway through.
  • In a small bowl, mix balsamic vinegar and honey (or maple syrup) until combined.
  • In the last five minutes, drizzle the glaze over the carrots and toss to coat.
  • If using thyme, sprinkle it over the carrots just before serving.

Notes
