For the steak

For the crust

  • 2 tbsp panko bread crumbs Crispy and light, enhancing the texture of the topping.

Instructions

Make the Marinade

  • Whisk together the olive oil, balsamic vinegar, salt, pepper, chopped green onions, and brown sugar in a large dish.

Marinate the Steak

  • Lightly score one side of the flank steak in 1-inch sections.
  • Place the steak into the marinade, letting it soak for 30 to 45 minutes, turning once halfway through.

Broil the Steak

  • Preheat your broiler on high and place the scored steak side up on a broiler pan.
  • Broil for 3 minutes on each side.

Add the Crust

  • Melt the butter and mix it with the panko breadcrumbs.
  • Press the blue cheese into the scored cuts and sprinkle the breadcrumb mixture on top.

Final Broil

  • Return steak to the broiler for another 5 minutes or until the crust turns golden brown.

Rest and Serve

  • Let the steak rest for 10–15 minutes, then slice against the grain.
