Ingredients

For the Chicken Skewers

  • 1.5 lbs boneless, skinless chicken breast or thighs, cut into 1-inch cubes The star of the show.

  • 0.5 teaspoon salt Essential for seasoning.
  • 0.5 teaspoon black pepper Essential for seasoning.

For the Bang Bang Sauce

  • 0.5 cup mayonnaise Creamy base for the sauce.
  • 2 tablespoons sweet chili sauce Adds sweet and spicy element.
  • 1 tablespoon Sriracha Gives a kick of heat.
  • 1 tablespoon honey Enhances sweetness.
  • 1 teaspoon lime juice Adds fresh zing.

Instructions

Marinate the Chicken

  • In a large bowl, whisk together the olive oil, soy sauce, honey, garlic powder, smoked paprika, salt, and black pepper until well combined.
  • Add the chicken cubes, ensuring they’re evenly coated.
  • Cover the bowl and refrigerate for at least 30 minutes, allowing flavors to meld.
  • Marinating up to 4 hours is ideal for maximum flavor.

Make the Bang Bang Sauce

  • In a small bowl, combine the mayonnaise, sweet chili sauce, Sriracha, honey, and lime juice.
  • Whisk until smooth. Taste and adjust seasoning if needed, then set aside for serving.

Assemble the Skewers

  • Once marinated, take the soaked wooden skewers and thread the chicken pieces onto them.
  • Leave a little space between each piece to ensure even cooking.

Cook the Skewers

  • Grill: Preheat the grill to medium-high heat. Cook the skewers for 10-12 minutes, turning occasionally, until golden brown and the internal temperature reaches 165°F (75°C).
  • Oven: Preheat the oven to 400°F (200°C). Place the skewers on a baking sheet and bake for 20-25 minutes, flipping halfway through.
  • Air Fryer: Set the air fryer to 375°F (190°C). Cook for 10-12 minutes, flipping halfway through for an even cook.

Serve & Enjoy

  • Drizzle the Bang Bang sauce over the cooked chicken skewers or serve it on the side as a dipping sauce.
  • Garnish with chopped green onions and sesame seeds if desired.

Notes

For enhanced flavor, add fresh ginger or lime zest to the marinade. Vegetables can be added to the skewers for nutrition and color. For different proteins, shrimp or tofu can be used. Marinating the chicken the night before makes it easier.
