Ingredients

For the Shrimp

  • 1 lb shrimp, peeled and deveined Fresh, plump shrimp that will soak up the flavors beautifully.
  • 1/4 cup mayonnaise Creamy and rich, enhancing the overall texture of the dish.
  • 2 tbsp sweet chili sauce Sweet and slightly tangy, adding a delightful twist.
  • 1 tsp sriracha For that perfect kick of heat.

For the Tacos

  • 8 pieces corn tortillas Soft, warm tortillas that provide the perfect base for your taco creation.
  • 2 cups shredded cabbage Crunchy and refreshing, ideal for texture contrast.
  • 1 piece avocado, sliced Buttery and rich, adding creaminess and a pop of color.
  • 1 piece lime, cut into wedges Bright and zesty, perfect for squeezing over the tacos.
  • 1 tbsp chopped fresh cilantro Aromatic and colorful, enhancing the visual appeal and flavor.

Instructions

Prepare the Sauce

  • In a small mixing bowl, combine the mayonnaise, sweet chili sauce, and sriracha. Stir until well blended to create a creamy and flavorful sauce.

Coat the Shrimp

  • Take the cleaned shrimp and toss them with half of the prepared sauce until they are evenly coated.

Cook the Shrimp

  • Heat a grill or pan over medium-high heat. Cook the shrimp for about 2 minutes on each side, or until they turn pink and are cooked through.

Warm the Tortillas

  • While the shrimp cooks, warm the corn tortillas in a dry pan over medium heat or microwave them until soft and pliable.

Assemble Tacos

  • Lay the warm tortillas flat. Fill each tortilla with shredded cabbage, followed by the sautéed shrimp. Top off with slices of fresh avocado.

Add Sauce and Serve

  • Drizzle the remaining sauce over the tacos and sprinkle with chopped cilantro. Serve with lime wedges on the side.

Notes

For added crunch, consider roasting the shrimp in the oven instead of pan-searing. You can also customize ingredients based on your preferences, such as using whole wheat tortillas or adding jalapeños for extra heat.
