Instructions

Preparation of BBQ Chicken

  • Heat 2 tablespoons of olive oil in a medium-sized pan over medium heat.
  • Add the thinly sliced red onion and sauté for 2 minutes until softened.
  • Stir in 3 cloves of minced garlic, then add the shredded chicken, paprika, Worcestershire sauce, and BBQ sauce.
  • Cook for 2-3 minutes until everything is warm and combined.

Prep Garlic Butter

  • In a microwave-safe bowl, combine 1/4 cup of butter, 2 cloves of minced garlic, and 2 teaspoons of chopped parsley.
  • Microwave until melted and well combined, about 30 seconds.
  • Spread the garlic butter generously on one side of each slice of bread.

Assemble Sandwiches

  • Flip the slices of bread so that the buttered side is down.
  • On 6 slices, layer 2 slices of Havarti cheese, then a scoop of BBQ chicken mixture, and top with another slice of cheese.
  • Place the remaining 6 slices on top, buttered side facing up.

Cooking

  • Heat a skillet over medium heat.
  • Carefully place the assembled sandwiches in the skillet and cook for 3-5 minutes per side or until golden brown and the cheese has melted.
