  • 1 tbsp cornstarch mixed with 2 tbsp water Thickens the sauce.

Instructions

Preparation

  • Parboil potato slices in salted water for about 4 minutes, then drain and set aside.
  • Heat 1 tablespoon of oil in a large wok over high heat and sear the thinly sliced beef until browned, about 2-3 minutes. Remove from the pan and set aside.
  • In the same wok, add the remaining oil, sliced onion, minced garlic, and grated ginger. Sauté until fragrant, about 1-2 minutes.

Cooking

  • Add the blanched potato slices to the pan and stir-fry until golden brown and crispy, about 4-5 minutes.
  • Return the seared beef to the pan, add soy sauce, oyster sauce, hoisin sauce, and brown sugar. Stir well to coat.
  • Add the cornstarch slurry and let the mixture thicken for about 1-2 minutes.
  • Stir in chopped scallions and sesame oil, toss together, and serve hot.

Notes

Prep all ingredients before starting to maintain vibrant colors and nutrients. You can marinate the beef for added flavor. For heat, use red pepper flakes or chilies. A good wok ensures better results.
