Instructions

Preparation

  • In a medium bowl, thoroughly mix chocolate cookie crumbs, granulated sugar, and melted butter until it resembles wet sand. Press this mixture into the bottom of a 9-inch springform pan.
  • In a large bowl, beat the softened cream cheese until smooth. Gradually add in granulated sugar and vanilla extract, beating until fully combined.
  • Gently fold in the whipped heavy cream into the cream cheese mixture until smooth and fluffy.
  • Pour the cheesecake filling over the prepared crust, spreading it evenly.
  • Refrigerate the cheesecake for at least 4 hours or until set.

Cherry Filling

  • In a saucepan, combine drained cherries, granulated sugar, cornstarch, and water. Cook over medium heat, stirring constantly until thickened. Let cool.

Assembly

  • Spread the cooled cherry filling evenly over the top of the chilled cheesecake.
  • Garnish with chocolate shavings, whipped cream, and maraschino cherries before serving.

Notes

For a smoother filling, ensure cream cheese is at room temperature. Don't over-whip the heavy cream; aim for soft peaks. You can store leftovers in an airtight container for up to 5 days.
