Instructions

Preparation and Baking

  • Preheat your oven to 400°F (200°C).
  • Slice the baguette into 1/2-inch rounds. Arrange them on a baking sheet, then drizzle with olive oil.
  • Sprinkle with salt.
  • Bake for 5 minutes.
  • Flip the slices and bake again until golden and crisp, about another 3-5 minutes.

Making the Topping

  • In a small pan, combine half the blackberries with balsamic vinegar and the sprig of rosemary. Simmer over medium heat for about 5 minutes, mashing the berries slightly.
  • Remove from heat, discard the rosemary, and stir in the remaining fresh blackberries.
  • In a bowl, mix goat cheese with heavy cream, lemon zest, salt, and pepper until smooth and creamy.

Assembly

  • Spread the goat cheese mixture generously onto each toasted baguette slice.
  • Top each slice with the blackberry mixture and add a small piece of rosemary on top.

Notes

Don’t rush the toasting process. Choose ripe blackberries for the best flavor. You can use thyme or basil instead of rosemary for variety. Consider adding a drizzle of honey for sweetness.
