Preparation

  • In a small saucepan over medium heat, combine the blueberries, balsamic vinegar, and brown sugar. Stir occasionally, mashing the berries gently with a spoon or fork to release their juices. Simmer for about 5 minutes until slightly thickened.
  • Remove the mixture from heat and strain it through a fine mesh strainer to separate the solid and liquid parts. Set the thickened blueberry portion aside.

Assembly and Grilling

  • Spread the blueberry mixture evenly onto one slice of the rustic sourdough. Layer half of your chosen cheese over the blueberry spread. Add a generous layer of fresh spinach or arugula, followed by the remaining cheese.
  • Heat a skillet over medium heat. Carefully place the assembled sandwich in the pan and cook for 3–4 minutes per side, pressing slightly with a spatula to enhance browning.
  • Remove the sandwich from the skillet and let it cool for a minute before slicing it in half to serve.

Notes

For added flavor, consider adding goat cheese. Optional extras include tomatoes or jalapeños. Use a lid on the skillet to melt the cheese thoroughly.
