Herbs and Seasoning

Instructions

Preparation

  • Generously season the beef short ribs with salt and pepper.
  • In a heavy pot, heat ghee or butter over medium-high heat and sear the ribs until browned, about 12-15 minutes.
  • Remove the ribs and set them aside on a plate.

Cooking

  • In the same pot, add sliced onions and minced garlic, cooking for 2-3 minutes until softened.
  • Pour in coconut aminos and balsamic vinegar, scraping the bottom of the pot to deglaze.
  • Stir in tomato paste and flour, then whisk in beef broth until smooth.
  • Return the seared ribs to the pot with thyme and bay leaf.
  • Cover and braise in a preheated oven at 350°F (175°C) for 2 hours.

Final Touches

  • After braising, discard thyme and bay leaf, serving the ribs with sauce over sides like mashed potatoes.

Notes

Marinate ribs overnight for extra flavor. For gluten-free, use gluten-free flour. Slow cooker option: Cook on low for 6-8 hours.
