Ingredients

Bruschetta Mixture

  • 1 tablespoon balsamic vinegar
  • 1 pint cherry tomatoes, halved
  • 1/3 cup chopped fresh basil
  • 4 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Pasta and Chicken

  • 12 oz spaghetti
  • 1 lb chicken breasts, diced
  • 1 tablespoon Italian seasoning
  • 1 tablespoon olive oil
  • 2 tablespoons olive oil, divided

Serving Garnish

  • 1/2 cup Parmesan cheese, grated or shredded
  • 1 tablespoon balsamic glaze (optional)

Instructions

Preparation

  • In a medium bowl, combine the halved cherry tomatoes, chopped basil, minced garlic, balsamic vinegar, salt, and black pepper. Toss gently to mix, then cover and chill in the refrigerator for at least 30 minutes.

Cooking the Pasta

  • Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente according to package instructions. Reserve about 1/2 cup of pasta water, then drain and set aside.

Sautéing the Chicken

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add diced chicken and season with Italian seasoning, salt, and black pepper. Sauté until cooked through and golden brown, about 7-10 minutes. Remove chicken from skillet and set aside.

Combining Ingredients

  • In the same skillet, add the remaining tablespoon of olive oil. Stir in the chilled bruschetta mixture and cook for about 1 minute until heated through.
  • Add cooked spaghetti and sautéed chicken to the skillet. Toss everything together, adding reserved pasta water if the mixture seems dry.

Serving

  • Plate the Bruschetta Chicken Pasta, topping each serving with grated Parmesan cheese. Drizzle with balsamic glaze if desired, and serve warm.

Notes

Use fresh ingredients for the best flavor and consider marinating the chicken for extra taste. This dish can be made vegetarian by substituting chicken with grilled zucchini or mushrooms.
