Ingredients

For the salad

  • 1 ball fresh burrata (125–150g) A rich and creamy cheese.
  • 1 tbsp olive oil Plus more for drizzling.
  • 4 medium roasted plums Use ripe plums for optimal flavor.
  • 1/4 cup pistachios Chopped for added crunch.
  • 1 tbsp fresh thyme Plucked leaves.
  • 1 tbsp balsamic vinegar Optional, for drizzling.

Instructions

Preparation

  • Preheat the oven to 400°F (200°C).
  • Slice the plums in half, remove the pits, and place them fleshy side up on a baking sheet. Drizzle with olive oil.
  • Roast the plums for 15-20 minutes until caramelized.
  • While the plums roast, place the burrata on a serving plate.

Assembly

  • Once plums are done, arrange the roasted halves around the burrata.
  • Sprinkle with chopped pistachios.
  • Add fresh thyme leaves.
  • Drizzle with additional olive oil and balsamic vinegar if desired.
  • Serve immediately.

Notes

For best results, choose plums that are ripe but slightly firm. Don't skip the drizzle of olive oil as it enhances the flavors of the dish.
