Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Spread the chopped pecans on a baking sheet and toast them for 6–8 minutes until fragrant. Let them cool completely.
  • In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

Mixing Dough

  • In a large bowl, beat the room temperature butter, granulated sugar, and brown sugar together until creamy and fluffy, about 3 minutes.
  • Mix in the eggs one at a time, thoroughly incorporating each before adding the next. Then, beat in the vanilla extract until smooth.
  • Gradually add the dry mixture to the wet ingredients, mixing until just combined. Fold in the cooled, toasted pecans.

Baking

  • Using a cookie scoop, form dough into 1.5 tablespoon-sized balls and place them onto a baking sheet. If desired, chill the dough in the refrigerator for 30 minutes.
  • Bake on a lined baking tray for 10–12 minutes or until the edges are golden and centers are set.
  • Allow cookies to rest on the tray for 5 minutes before transferring to a wire rack to cool completely.

Notes

To enhance flavor, consider replacing half of the granulated sugar with brown sugar. Adding a sprinkle of cinnamon or nutmeg can also elevate the aroma. For extra richness, mix in chocolate chips or drizzle melted chocolate over cooled cookies.
