Instructions

Preparation

  • In a bowl, combine the warm water and yeast. Let it sit for about 5 minutes until it's foamy.
  • Once ready, stir in the salt, brown sugar, and melted butter. Gradually add in the flour and knead the mixture until you achieve a smooth consistency (approximately 5 minutes).
  • Cover the dough with a towel and let it rise in a warm place for about 1 hour, or until it has doubled in size.

Cooking

  • Preheat your oven to 450°F (230°C).
  • Once your dough has risen, divide it into 8 equal pieces. Roll each piece into a long rope and twist it into a classic pretzel shape.
  • Boil 10 cups of water in a large pot and add the baking soda. Carefully drop each pretzel into the boiling water and let them cook for 30 seconds.
  • Once boiled, place them on a parchment-lined baking sheet.
  • Brush each pretzel with the egg wash mixture and sprinkle coarse sea salt on top.
  • Bake for 12 to 14 minutes or until the pretzels are golden brown and fragrant.

Making the Cheese Dip

  • Melt the butter in a saucepan over medium heat.
  • Whisk in the all-purpose flour, ensuring no lumps remain.
  • Gradually pour in the milk, stirring until the mixture thickens.
  • Incorporate the shredded cheddar cheese and Dijon mustard (if using). Stir until smooth and season with salt and pepper to taste.
