Ingredients

For the salad

  • 2-3 pieces ripe pears, unpeeled, cored, and sliced Use ripe but firm pears for the best results.
  • 100 g blue cheese, crumbled Can be substituted with goat cheese or feta.
  • 30 g chopped walnuts Toast before adding to enhance flavor.
  • 30 g butter Used for caramelizing pears.
  • 2 tablespoons honey
  • 2 tablespoons fresh lemon juice Prevents pears from browning.
  • 2 handfuls peppery rocket leaves (arugula) Can be substituted with mixed greens.

Instructions

Preparation

  • Slice the ripe pears and place them in a bowl. Drizzle the lemon juice over the pear slices, followed by the honey. Toss gently to coat all slices.
  • Heat a non-stick pan over medium heat. Add the chopped walnuts and toast for about 3–4 minutes, tossing frequently until fragrant. Transfer to a plate and set aside.

Cooking

  • In the same pan, melt the butter over medium heat. Add the honey-coated pears to the pan and cook for 5–7 minutes, turning occasionally until they soften and caramelize.

Assembly

  • On individual serving plates, create a bed of arugula leaves. Add warm caramelized pears on top, crumble blue cheese over them, and sprinkle with toasted walnuts.
  • Serve immediately while warm. Drizzle with optional balsamic glaze or honey for added flavor.

Notes

For extra crunch, add toasted pumpkin seeds. Alternatively, thinly sliced red onions or seasonal fruits like figs may enhance flavor.
