Instructions

Preparation

  • In another bowl, beat the eggs with both sugars until well combined. Add in the vegetable oil, Greek yogurt, and vanilla extract, whisking until smooth.
  • Pour the wet mixture into the dry ingredients, stirring gently until just combined—be careful not to overmix.
  • Gently fold in the grated carrots, raisins, and nuts (if using), ensuring even distribution.

Baking

  • Pour the batter into the prepared baking pan and smooth the top. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.

Frosting
