Instructions

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a baking dish with olive oil.
  • Boil the tortellini in salted water for 2 minutes less than the package recommends, then drain and set aside.
  • In a large bowl, combine the cooked tortellini, pizza sauce, Italian seasoning, garlic powder, and half the mozzarella cheese. Toss until well-coated.

Assembly

  • Pour the mixture into the greased baking dish.
  • Top with remaining mozzarella, Parmesan, and pepperoni slices.

Baking

  • Bake uncovered for 20–25 minutes until cheese is melted, bubbly, and slightly golden.
  • Sprinkle with red pepper flakes and parsley if desired, and serve hot.

Notes

For extra flavor, sauté diced bell peppers or onions with the tortellini before mixing. You can swap out the pepperoni for turkey pepperoni or other cooked meats for a lighter option. Add veggies like spinach or mushrooms for added nutrition.
