Ingredients

For the Chicken

  • 2 large boneless, skinless chicken breasts (butterflied & pounded thin)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter

For the Mushroom Filling

  • 3 cloves garlic, minced
  • 2 cups cremini or baby bella mushrooms, sliced
  • 1/4 tsp salt
  • 1/4 tsp thyme
  • 3/4 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

For the Sauce

  • 2 tbsp butter
  • 1 tbsp flour
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup shredded mozzarella

For Garnish

  • 1 tbsp fresh parsley, chopped

Instructions

Preparation

  • Butterfly each chicken breast and pound to about 1/2 inch thick. Season with salt, black pepper, and Italian seasoning.

Sauté the Mushrooms

  • Heat butter in a skillet over medium heat, add minced garlic and sauté for 30 seconds.
  • Add sliced mushrooms, 1/4 tsp salt, and thyme. Sauté until golden brown and tender, about 5–6 minutes.
  • Allow the mixture to cool slightly.

Assemble the Rolls

  • Lay each chicken breast flat, spoon a generous amount of the mushroom mixture, and top with mozzarella and Parmesan cheese.
  • Roll each breast tightly and secure with toothpicks.

Sear the Chicken

  • In the same skillet, heat olive oil over medium-high and sear the chicken rolls seam-side down until golden brown, about 8–10 minutes.
  • Remove and set aside.

Make the Sauce

  • Melt 2 tbsp of butter in the skillet, whisk in flour to form a roux, and cook for 1–2 minutes.
  • Gradually stir in chicken broth and heavy cream, simmer until thickened. Stir in remaining mozzarella cheese and season with salt and pepper.

Bake & Finish

  • Preheat oven to 375°F (190°C). Arrange chicken rolls in a baking dish, pour sauce over, and bake uncovered for 20–25 minutes.
  • Garnish with chopped parsley before serving.

Notes

Use fresh ingredients for best flavor. You can prepare the chicken rolls and mushroom filling in advance and bake when ready. Consider adding crushed red pepper flakes for a spicy kick.
