  • 6 pieces low-carb tortillas (8-inch size) Soft, pliable, and low-carb

Instructions

Preparation

  • Preheat your oven to 375°F (190°C). Lightly grease a baking dish or line it with parchment paper.
  • Lay out each tortilla on a flat surface and spread 1-2 tablespoons of pizza sauce evenly over each tortilla.
  • Sprinkle shredded mozzarella on top of the sauce. Place 4 pepperoni slices per tortilla, then sprinkle with dried oregano, garlic powder, and crushed red pepper flakes if desired.
  • Tightly roll up each tortilla and place them seam-side down in the prepared baking dish.
  • Spoon a little extra pizza sauce over the tops (optional) and sprinkle more mozzarella and extra pepperoni.

Baking

  • Bake in the preheated oven for 15-18 minutes, or until the cheese is melted and bubbly, and the edges turn golden brown.
  • Once baked, sprinkle with dried parsley or basil before serving.

Notes

Consider using flavored tortillas for variety and add toppings like olives or bell peppers for added texture. To cut down on baking time, microwave the roll-ups for 2-3 minutes before baking.
