Ingredients

For the Zucchini

  • 3 large large zucchinis, sliced lengthwise into thin ribbons Yielding crispy and tender layers.

For the Sauce and Topping

  • 1.5 cups marinara sauce Bathing the rolls in flavor.

Instructions

Preparation

  • Use a mandoline or sharp knife to slice the zucchinis lengthwise into thin strips. Lay them on paper towels and sprinkle with salt, allowing them to sit for 15-20 minutes.
  • Pat dry after the time is up to remove excess moisture.

Mix Filling

  • In a mixing bowl, combine the ricotta cheese, minced garlic, salt, black pepper, dried oregano, grated parmesan, and the egg (if using).
  • If using ground meat, fold it in at this stage.

Assemble the Roll-Ups

  • Spread a spoonful of the cheese filling on each zucchini slice. Roll each zucchini from one end to the other and place seam-side down in a greased baking dish.
  • Layer marinara sauce at the bottom of the dish to keep rolls moist.

Bake the Dish

  • Spoon remaining marinara sauce over the top of the rolls and sprinkle shredded mozzarella cheese generously.
  • Cover with foil and bake in a preheated 375°F (190°C) oven for 20 minutes. Remove foil and bake for an additional 10-15 minutes until golden and bubbly.

Serve

  • Allow to cool slightly, garnish with fresh basil or parsley, and serve warm.

Notes

These roll-ups can be assembled a day in advance and stored in the fridge. Make sure to select firm zucchinis and allow them to sweat to avoid sogginess. Experiment with fillings for variation.
