Instructions

Preparation

  • In a mixing bowl, combine cream cheese, shredded mozzarella, chopped parsley, garlic powder, onion powder, salt, and black pepper. Mix until smooth and creamy.
  • Take each chicken thigh and carefully slice into one side to create a pocket.
  • Generously fill each chicken thigh pocket with the cream cheese mixture and secure openings with toothpicks if needed.
  • In a clean bowl, whisk together eggs and milk until fully combined to prepare the egg wash.
  • In another bowl, combine panko breadcrumbs, grated Parmesan cheese, Italian seasoning, paprika, and melted butter. Mix well.

Coating and Baking

  • Dip each stuffed chicken thigh into the egg wash, then roll it in the breadcrumb mixture, pressing gently to adhere.
  • Arrange the coated stuffed chicken on a greased baking dish.
  • Preheat your oven to 375°F (190°C) and bake for approximately 25-30 minutes or until golden brown and cooked through.

Serving

  • Once baked, let the chicken rest for a few minutes, garnish with extra chopped parsley, and serve hot.

Notes

For added flavor, consider marinating the chicken in olive oil, lemon juice, and herbs before stuffing. Leftover filling can be used as a spread.
