Instructions

Preparation

Roasting Tomatoes

  • Roast for 2–2.5 hours until tomatoes are collapsed and slightly caramelized.

Preparing Avocado Swirl

  • In a food processor, combine the ripe avocado, lime juice, lime zest, Greek yogurt, and a pinch of salt.
  • Blend until silky and thick, adjusting salt and lime as needed.

Assembly

  • Spoon the avocado mixture onto a plate, creating a swoosh across the surface.
  • Layer the confited tomato slices on top, ensuring a vibrant presentation.
  • Garnish with microgreens, sesame seeds, and a drizzle of chili oil or pomegranate molasses.
