Instructions

Preparation

  • Preheat your waffle iron according to the manufacturer’s instructions.
  • In a large mixing bowl, combine the cornmeal, all-purpose flour, sugar, baking powder, and salt. Whisk to ensure even mixing.
  • In a separate bowl, whisk together the buttermilk, melted butter, and egg until well combined.
  • Pour the wet mixture into the dry ingredients, stirring just until combined; lumps are okay.

Cooking

  • Lightly grease the waffle iron with oil or cooking spray.
  • Pour in 1 to 2 tablespoons of batter into each waffle section.
  • Cook for approximately 3 to 4 minutes or until the waffles are golden brown and crisp. Transfer to a wire rack.
  • Preheat the oven to 350°F (175°C). On a baking sheet, sprinkle shredded smoked Gouda cheese on the baked waffles.
  • Bake for 3 to 5 minutes until the cheese melts.

Serving

Notes

Don't overmix the batter for light and fluffy waffles. Experiment with different cheeses for variety. You can prepare the batter the night before and refrigerate it.
