Ingredients

For the Sweet Potatoes

  • 4 medium sweet potatoes Soft, tender, and naturally sweet.
  • 2 tbsp olive oil For coating the sweet potatoes.

For the Cowboy Caviar

  • 1 cup black beans Creamy and earthy.
  • 1 cup corn kernels Can be grilled, canned, or frozen.
  • 1/2 unit red bell pepper Contributes a refreshing crunch.
  • 1/2 unit yellow bell pepper Harmonizes beautifully with the red pepper.
  • 1/2 small red onion Provides a sharp, sweet flavor.
  • 1 unit jalapeño Optional, for added spice.
  • 1 medium tomato Juicy and refreshing.
  • Juice of 1 lime Ties the ingredients together.
  • 2 tbsp olive oil For the cowboy caviar mixture.
  • 2 tbsp chopped fresh cilantro Adds aroma and taste.
  • Salt & pepper to taste For adjusting flavors.

To Serve

  • Greek yogurt or sour cream To complement the sweetness.
  • Extra cilantro or sliced avocado Optional garnishes.

Instructions

Preparation

  • Preheat the oven to 200°C (400°F). Scrub the sweet potatoes under cool water and prick each potato several times with a fork. Rub with olive oil and place on a baking tray lined with parchment paper.

Cooking the Sweet Potatoes

  • Roast the sweet potatoes for 45–60 minutes until fork-tender.

Make the Cowboy Caviar

  • While the sweet potatoes are baking, combine the black beans, corn, diced peppers, chopped onion, jalapeño (if using), and seeded tomato in a bowl. Drizzle with lime juice and olive oil, then season with cilantro, salt, and pepper.
  • Toss the ingredients together and let it chill in the refrigerator.

Assemble the Dish

  • Once the sweet potatoes are done, slice them open lengthwise and fluff the flesh with a fork. Spoon the chilled cowboy caviar over each potato.
  • Add a dollop of Greek yogurt or sour cream on top and garnish with cilantro or avocado, if desired.

Serving

  • Serve warm, enjoying the vibrant flavors.

Notes

To enhance flavors, let the caviar chill. Avoid overstuffing the potatoes. For a lighter meal, replace Greek yogurt with avocado puree.
