Ingredients

For the filling

  • 3/4 cup cooked shrimp, chopped Use large shrimp for best texture.
  • 1 cup lump crab meat, drained and picked over Ensure no shells are present.
  • 4 oz cream cheese, softened Let sit at room temperature for easy mixing.
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon zest Fresh lemon is preferred.
  • 1 clove garlic, minced
  • 2 tablespoons chopped fresh parsley Can substitute with other herbs.
  • 1/2 teaspoon Old Bay seasoning Optional; adds a seafood flavor.
  • 1 tablespoon chopped dill Optional for added flavor.
  • Salt and pepper to taste

For assembly

  • 4 pieces salmon fillets, thick, skin-on or skinless
  • Lemon slices for topping Adds a fresh citrus aroma.

Instructions

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a baking dish with cooking spray or olive oil.
  • In a mixing bowl, combine lump crab meat, chopped shrimp, cream cheese, mayonnaise, Dijon mustard, lemon zest, minced garlic, parsley, optional dill, Old Bay seasoning, salt, and pepper. Stir the mixture until well blended.
  • Carefully slice a pocket into each salmon fillet, being cautious not to cut all the way through.
  • Lightly season the outside of each fillet with salt and pepper.
  • Stuff each pocket in the salmon fillets with the mixture, securing with toothpicks if necessary.
  • Top each stuffed fillet with a slice of fresh lemon.

Cooking

  • Place the stuffed salmon fillets in the prepared baking dish and bake for 20–25 minutes, or until flaked easily and reaches an internal temperature of 125°F (52°C).
  • For a bubbly, golden top, broil for an additional 2 minutes.
  • Allow the stuffed salmon to rest for 5 minutes before serving.

Notes

For additional flavor, consider adding Parmesan cheese before broiling. You can also use red pepper flakes for a hint of heat. Prepping the filling in advance can save time.
