For the mushrooms

  • 16 large white or cremini mushrooms The base for the filling.

Instructions

Preparation

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Clean mushrooms and remove stems. Brush each cap with olive oil and season with salt and pepper. Arrange on the baking sheet.
  • In a medium bowl, combine crab meat, cream cheese, Parmesan, mozzarella, mayonnaise, garlic, lemon juice, parsley, and Old Bay seasoning. Mix well and season with salt and pepper.
  • Spoon the crab mixture into each mushroom cap, letting it overflow slightly.
  • Sprinkle extra Parmesan cheese on top.

Baking

  • Bake for 18-20 minutes, or until mushrooms are tender and filling is golden and bubbly.
  • Sprinkle with fresh parsley before serving.

Notes

Add a squeeze of fresh lemon juice before serving for extra zing. For a spicy kick, consider cayenne pepper or red pepper flakes. You can also mix in diced bell peppers or green onions for additional texture and color.
