Ingredients

Meatloaf Base

  • 2 large eggs
  • 2/3 cup milk
  • 32 count Ritz crackers, crushed into fine crumbs
  • 1/2 cup onion, finely chopped
  • 4 ounces sharp cheddar cheese, shredded
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 pounds ground beef

Glaze

  • 1/2 cup ketchup
  • 1/2 cup brown sugar
  • 1 teaspoon mustard

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan or baking dish.
  • In a large mixing bowl, beat the eggs until fully combined.
  • Stir in the milk followed by the crushed Ritz crackers, allowing them to absorb the liquid for a few moments.
  • Add the chopped onion and shredded cheddar cheese to the mixture, ensuring they are evenly distributed.
  • Gently mix in the ground beef without overworking it.

Cooking

  • Shape the mixture into a loaf and place it into the greased baking dish.
  • Bake in the preheated oven for 45 minutes.
  • Prepare the glaze by whisking together the ketchup, brown sugar, and mustard in a small bowl.
  • At the 30-minute mark, remove the meatloaf from the oven and spread half of the glaze over the top.
  • Return it to the oven and bake for an additional 10 minutes.
  • Remove the meatloaf again and spread the remaining glaze on top.
  • Bake for another 5-10 minutes or until the internal temperature reaches 160°F (71°C).

Serving

  • Let it rest for 10 minutes before slicing.
  • Serve with your favorite sides and enjoy!

Notes

For a flavor boost, consider adding minced garlic or a dash of Worcestershire sauce. Resting time is crucial for juiciness. Customize cheese to your preference. This dish can be prepped in advance.
