Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Rub sweet potatoes with olive oil, salt, and pepper. Place them cut-side down on a baking sheet and roast for 30-40 minutes until tender.

Cooking Chickpeas

  • In a medium-sized pan, heat a tablespoon of olive oil over medium heat. Add drained chickpeas, smoked paprika, garlic powder, cumin, optional chili flakes, salt, and pepper. Cook for 5-7 minutes until crispy and golden, stirring occasionally.

Preparing Tahini Butter Sauce

  • In a bowl, whisk together tahini, melted butter (or olive oil), lemon juice, maple syrup, minced garlic, a pinch of salt, and enough warm water to make a smooth sauce.

Assembly

  • Once the sweet potatoes are roasted, remove them from the oven and flip them over. Mash the flesh slightly with a fork.
  • Spoon crispy spiced chickpeas generously over the sweet potatoes. Drizzle with tahini butter sauce and sprinkle with parsley and toasted breadcrumbs.
  • Add extra chili flakes if desired.
