  • 1 ball burrata (room temperature) Indulgent and creamy, it's the heart of the dish.

Instructions

Preparation

  • In a deep skillet, warm the olive oil over medium heat. As it shimmers, add the minced garlic and orzo pasta, stirring frequently for about 2 minutes until the garlic is golden and fragrant.
  • Gradually pour in the hot vegetable broth, stirring continuously. Continue to cook for about 10 to 12 minutes, until the orzo is tender and has absorbed most of the liquid. Season with salt, pepper, and invigorating lemon zest.
  • While the orzo is cooking, combine the feta cheese, heavy cream, lemon juice, and optional Parmesan in a blender. Blend until you obtain a smooth and creamy texture.
  • Once the orzo is ready, remove it from the heat and stir in the creamy feta mixture until fully incorporated and velvety.
  • Spoon the creamy orzo into a shallow bowl or serving dish. Gently nestle the room-temperature burrata in the center.
  • Finish with fresh herbs, sprinkle lemon curls on top, and add a dash of cracked black pepper. Serve hot.

Notes

For lighter variations, consider using low-fat cream or Greek yogurt. You can also add vegetables like spinach or chickpeas for extra nutrition.
