  • 4 fillets salmon fillets (about 1 lb total, skin-on) Juicy and flaky centerpiece.

  • 3 cups baby spinach Fresh and vibrant addition.

  • 3/4 cup half & half or heavy cream For a luxuriously creamy sauce.
  • 1/3 cup grated Parmesan Nutty and salty to enrich the sauce.
  • 1 tbsp fresh parsley, chopped For finishing touch.
  • 1/4 tsp red pepper flakes (optional) For added spice.
  • 1/2 tsp salt To season the salmon.
  • 1/4 tsp black pepper For warmth.

Instructions

Preparation

  • Season the salmon fillets with salt and black pepper. Heat olive oil in a large pan over medium heat.
  • Add the salmon, skin-side up, and sear for about 5 minutes until golden brown.
  • Flip the fillets gently, cooking for another 3–4 minutes until done. Transfer to a plate and set aside.

Create the Sauce

  • In the same pan, melt the butter over medium heat. Add the finely diced garlic and cook for about one minute.
  • Stir in the diced roasted red peppers, sautéing for about 2 minutes until heated through.

Add Fresh Spinach

  • Add the baby spinach to the pan and sauté until wilted down, approximately 2-3 minutes.

Make It Creamy

  • Reduce the heat to low and pour in the half & half (or heavy cream). Stir to combine.
  • Mix in the grated Parmesan, chopped parsley, red pepper flakes (if using), salt, and black pepper. Heat through until smooth and creamy.

Combine and Serve

  • Return the salmon fillets to the pan, spoon the creamy sauce over the top, and let warm for a minute or two.
  • Serve immediately, garnished with extra parsley if desired.

Notes

To enhance flavors, use a digital thermometer to check the salmon's internal temperature (should be 145°F). Feel free to add other veggies like kale, zucchini, or mushrooms. For a non-dairy option, replace the cream and Parmesan.
