For the marinated beets

  • 1/2 tbsp date syrup Adds a hint of natural sweetness to the marinade.
  • 1 tbsp apple cider vinegar Provides acidity, complementing the sweetness of the beets.
  • Handful chopped roasted pistachios Offers a nutty crunch that beautifully contrasts the creamy feta.
  • Fresh dill, chopped Aromatic and refreshing, adding a herbal note.

Instructions

Preparation

  • Start by boiling the halved beets in salted water for about 20 minutes, or until they are fork-tender.
  • Once boiled, allow the beets to cool slightly. Peel off the skins with your fingers or a paper towel.
  • Slice the beets into thin rounds or wedges.
  • In a blender or food processor, combine the feta cheese, Greek yogurt, and lemon juice. Blend until creamy and smooth.
  • In a small bowl, whisk together the apple cider vinegar, date syrup, and olive oil.
  • Toss the sliced beets in the marinade and allow them to sit for about 5 minutes.

Assembly

  • On a serving plate, spread the whipped feta mixture into an even layer.
  • Arrange the marinated beet slices over the feta, then sprinkle with chopped pistachios and fresh dill.
  • Drizzle a little extra olive oil and season with sea salt and black pepper to elevate the flavors.

Notes

Select fresh beets for the best flavor. You can enhance creaminess with more Greek yogurt or cream. Feel free to interchange dill with other fresh herbs. If pistachios are unavailable, walnuts or pecans can be used.
