Ingredients

For the Crust

  • 1 packet tennis biscuits or graham crackers, crushed
  • 1/2 cup melted butter

For the Filling

  • 1 cup Cremora (coffee creamer powder)
  • 1/2 cup cold water
  • 1 cup plain or vanilla yogurt
  • 1 tin (397g) sweetened condensed milk
  • 1/2 cup freshly squeezed lemon juice
  • 1 piece zest of lemon (optional)

Instructions

Preparation of Crust

  • Combine the crushed biscuits with the melted butter until the crumbs are thoroughly coated.
  • Press the mixture firmly into the bottom of a square or round glass dish, forming a sturdy base.
  • Chill it in the refrigerator for about 10 minutes.

Preparation of Filling

  • In a medium bowl, stir together the Cremora and cold water until smooth. Let it sit for about 5 minutes to thicken slightly.
  • Whisk in the yogurt and sweetened condensed milk until silky and cohesive.
  • Gradually add in fresh lemon juice and optional zest.

Assembly

  • Pour the creamy mixture over the chilled crust, using a spatula to evenly distribute it.
  • Optionally, add a second layer of crushed biscuits either in between or on top of the filling.

Chill

  • Cover the dish with cling film and chill in the refrigerator for at least 4 hours, preferably overnight.

Serving

  • Once set, slice the tart into portions and serve cold. Garnish with fresh fruit or a sprinkle of lemon zest if desired.

Notes

For a unique twist, substitute lemon juice with lime or orange juice. Add fresh berries or sliced fruit on top for added flavor. Toasting the crushed biscuits in the oven can enhance the aroma.
