Instructions

Preparation

  • In a medium mixing bowl, combine crumbled feta cheese, Greek yogurt (if using), dried oregano, and black pepper. Mix until smooth and creamy.
  • Preheat your oven to 375°F (190°C).
  • Take a sheet of phyllo dough and lay it flat. Lightly coat with warm melted butter or olive oil.

Assembly

  • Place a spoonful of the feta mixture at one end of the phyllo sheet. Roll tightly and fold in the sides to secure the filling.
  • Repeat this process for all phyllo sheets.

Baking

  • Arrange the rolls seam-side down on a parchment-lined baking sheet. Brush the tops with melted butter or oil.
  • Bake for 15-18 minutes until golden brown and crispy.

Preparing the Spicy Honey

  • Gently heat honey with red pepper flakes and lemon juice in a small saucepan over low heat for 2-3 minutes.

Serving

  • Once baked, drizzle the warm chili honey over rolls and sprinkle with toasted sesame seeds and herbs.

Notes

To avoid common mistakes, cover unused phyllo sheets and brush enough butter or oil for crispiness. Don’t overfill the rolls to prevent bursting.
