Ingredients

Batter Ingredients

  • 1 cup all-purpose flour Ideal for creating the ultimate crisp
  • 3/4 cup cold beer Lager or pale ale – the secret to a fluffy batter
  • 1 tsp baking powder For that fluffy texture
  • 1/2 tsp salt Essential for flavor
  • a pinch paprika, garlic powder, or black pepper Optional spices for extra flavor

Fish Ingredients

  • 4 cod or haddock fillets Patted dry and ready to absorb the flavors
  • vegetable oil For frying, ensuring that perfect golden finish

Instructions

Preparation

  • Heat the vegetable oil in a deep pan or fryer to around 350°F (175°C).
  • In a mixing bowl, whisk together the all-purpose flour, baking powder, salt, and optional spices.
  • Slowly add the cold beer into the dry mix, whisking continuously until the batter becomes smooth. Allow it to rest for about 10 minutes.
  • While the batter rests, lightly coat each fish fillet in plain flour.

Cooking

  • Dip each fillet into the prepared batter, ensuring generous coverage.
  • Carefully lower the battered fish into the hot oil and fry for about 5–7 minutes until golden brown and crispy.
  • Once cooked, remove the fish from the oil and let it drain on a wire rack or paper towels.

Serving

  • Serve piping hot with tartar sauce and fresh lemon wedges.

Notes

Tips for success include using cold ingredients for a lighter batter, double-dipping for extra crunch, and not overcrowding the frying pan.
