Instructions

Preheat Oven and Prepare Biscuits

  • Preheat your oven to 425°F (220°C). In a large mixing bowl, whisk together 2 1⁄2 cups of all-purpose flour, 1 tablespoon baking powder, 1/2 teaspoon baking soda, and 1 teaspoon salt.
  • Cut in the cold, cubed butter until the mixture resembles coarse crumbs. Slowly stir in the cold buttermilk and honey until a dough forms.
  • Lightly flour your work surface, roll out the dough, and cut it into biscuit shapes. Bake for 12–15 minutes until golden and puffed.

Marinate Chicken

  • While your biscuits are in the oven, marinate the chicken. In a large bowl, combine 1 cup of buttermilk with 1 teaspoon hot sauce and mix well.
  • Add the chicken thighs or breasts, ensuring they are fully coated. Allow the chicken to marinate for at least 30 minutes.

Prepare Flour Mixture for Chicken

  • In another bowl, whisk together 1 1⁄2 cups of flour, 1/2 cup cornstarch, and the seasonings: 1 teaspoon smoked paprika, 1 teaspoon garlic powder, 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/2 teaspoon cayenne pepper.

Fry the Chicken

  • Heat vegetable oil in a deep pan to 350°F (175°C). Once heated, dredge the marinated chicken in the seasoned flour mixture, pressing to coat thoroughly.
  • Carefully add the chicken pieces to the hot oil, frying for 4–5 minutes on each side until golden brown and crisp. Allow them to drain on a wire rack.

Prepare Spicy Honey Butter

  • In a small bowl, whisk together the melted butter, 1/4 cup honey, 1/2 teaspoon cayenne pepper, 1/2 teaspoon smoked paprika, and 1/4 teaspoon salt.

Assemble Your Dish

  • To serve, split the warm biscuits in half. Stuff each biscuit with a generous piece of the crispy fried chicken, then drizzle with the spicy honey butter.

Notes

To ensure success, measure ingredients accurately and keep butter and buttermilk cold. Marinate the chicken longer for more flavor and maintain the right frying temperature for a crispy result.
