Ingredients

For the filling

  • 150 g whipped feta or a blended mixture of feta and Greek yogurt
  • 2 tbsp finely chopped roasted pistachios provides texture and healthy fats
  • 1 tbsp fresh mint finely chopped for refreshing aroma
  • 1 tsp lemon zest adds brightness to the filling
  • black pepper to taste

For the parcels

  • 6-8 sheets rice paper light and transparent for wrapping
  • olive oil or spray for frying
  • optional: edible flowers or sesame seeds for garnish

Instructions

Preparation

  • Combine whipped feta, chopped pistachios, fresh mint, lemon zest, and black pepper in a bowl. Stir until creamy and well blended.
  • Bring a bowl of warm water close to your workspace and dip each rice paper sheet for 5-10 seconds until softened.
  • Place a softened rice paper sheet on a clean surface and scoop 1.5 tablespoons of filling into the center.
  • Fold the sides of the rice paper over the filling and roll tightly to form a parcel.
  • Optional: Adorn with edible flowers or sesame seeds.

Cooking

  • Air-fry at 200°C (392°F) for 6-8 minutes or pan-fry in hot oil until crispy on both sides.
  • Serve warm with lemon wedges, hot honey, or a yogurt-herb dip.

Notes

Ensure rice paper is not over-soaked. Season the filling adequately for best flavor. For healthier alternatives, use cottage cheese or vegan cream cheese.
