Ingredients

For the Filling

  • 150 g feta cheese Creamy and tangy, it serves as the base of our filling.
  • 50 g cream cheese Adds a luscious texture.
  • 2 tbsp Greek yogurt Thick and refreshing.
  • 40 g shelled roasted pistachios, finely chopped Adds crunch and flavor.
  • 1/2 piece lemon zest Brightens the filling.
  • 1/2 tsp honey (optional) A hint of sweetness.
  • freshly ground black pepper Adds warmth.

For the Samosa Wrappers

  • 8-10 sheets rice paper Create a crispy exterior.
  • warm water for soaking Essential for softening the rice paper.
  • olive oil spray or neutral oil for brushing Ensures a golden texture.

Optional Garnishes

  • extra crushed pistachios For embellishing your dish.
  • mint leaves Offers a refreshing contrast.
  • chili flakes or za’atar For those who crave heat or flavor.

Instructions

Make the Filling

  • In a food processor, combine feta cheese, cream cheese, Greek yogurt, lemon zest, freshly ground black pepper, and optional honey. Pulse until smooth and creamy.
  • Stir in the chopped pistachios, ensuring they distribute evenly. Chill briefly in the refrigerator.

Soften the Rice Paper

  • Dip one rice paper sheet into warm water for 5-10 seconds until pliable but not too fragile.

Assemble the Triangles

  • Place softened rice paper on a flat surface. Add a spoonful of filling near one edge and fold over to form a triangle, sealing the edges.

Repeat & Air Fry

  • Continue with remaining rice paper and filling. Brush each samosa with olive oil.
  • Preheat air fryer to 200°C (390°F) and air fry for 6-8 minutes, flipping halfway.

Serve & Garnish

  • Remove samosas from air fryer and cool slightly. Garnish with crushed pistachios or mint leaves.

Notes

Ensure rice paper is not over-soaked to avoid tearing. Adjust garnishes and spices to your taste.
