Ingredients

Fritter Base

Filling

  • 1 1/2 cups fresh spinach, finely chopped Brings earthiness and nutrients.

  • 1/2 cup crumbled feta cheese Adds tang.
  • 1/4 cup ricotta cheese Enhances creaminess.
  • 1 tbsp fresh dill, chopped Adds freshness.

Instructions

Prepare the Filling

  • Heat 1 tablespoon of olive oil in a pan over medium heat. Add garlic and sauté for about 1 minute. Then, add spinach and sauté for 2-3 minutes until wilted. Remove from heat and fold in feta, ricotta, dill, lemon zest, nutmeg, salt, and pepper. Let mixture cool slightly.

Make the Dough

  • In a large mixing bowl, whisk cornmeal, flour, baking powder, salt, black pepper, oregano, and paprika until blended. Add egg, buttermilk, and melted butter, stirring until a thick dough forms. Let it rest.

Assemble the Fritters

  • Take 2 tablespoons of dough, flatten it, and spoon 1 tablespoon of the filling in the center. Cover with more dough and pinch edges to seal.

Fry Until Golden & Crispy

  • Heat vegetable oil in a skillet over medium heat. Fry fritters for 2-3 minutes per side until golden. Drain on paper towels.

  • Arrange fritters on a plate warm and consider serving with Greek yogurt or tzatziki for added flavor.
