Ingredients

For the Whipped Feta

  • 200 g feta cheese, crumbled Creamy and tangy element

To Serve

Instructions

Prepare the Sweet Potato Mixture

  • In a mixing bowl, combine the mashed roasted sweet potato, grated Parmesan, egg, smoked paprika, garlic powder, salt, and black pepper. Mix until a consistent texture forms.
  • Chill the mixture in the refrigerator for about 15 minutes.

Make the Whipped Feta

  • In a blender or food processor, combine the crumbled feta cheese, Greek yogurt, olive oil, and lemon zest. Blend until ultra-smooth and creamy.

Form the Sweet Potato Balls

  • Take the sweet potato mixture out of the refrigerator and roll it into small, bite-sized balls. Coat each ball in extra panko breadcrumbs.

Fry to Perfection

  • Heat neutral oil in a deep skillet over medium heat and fry the sweet potato balls in batches until golden and crispy, about 3 to 4 minutes.

Plate It Up

  • Spread a generous swoosh of the whipped feta onto a serving plate, arrange the crispy sweet potato balls on top, and drizzle with honey. Garnish with toasted panko crumbs and microgreens or thyme.

Notes

Chill the mixture longer for easier handling. For a healthier option, bake at 400°F (200°C) for 25-30 minutes. Feel free to add spices or fresh herbs. Alternatives to sweet potatoes include butternut squash or carrots.
