  • 1 cup fresh spinach, roughly chopped Vibrant green and full of flavor
  • 1/2 medium onion onion, finely minced Adding a sweet and aromatic depth

Dairy

  • 1/2 cup feta cheese, crumbled Providing a delightful creamy texture
  • 4 large eggs, whisked until smooth The base that binds it all together
  • 1/2 cup milk Adding richness to the quiche

Seasonings

  • 1 pinch salt Enhancing the flavors beautifully
  • 1 dash black pepper Providing a subtle hint of spice

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and lightly grease a pie dish.
  • In a pan over medium heat, cook the spinach and onion until softened and fragrant. Stir occasionally until the onions are translucent and the spinach has wilted. Remove from heat and let cool slightly.
  • In a mixing bowl, beat the eggs with the milk, salt, and black pepper until fully combined.

Mix and Bake

  • Stir the sautéed spinach and onions into the egg mixture, then gently fold in the crumbled feta cheese.
  • Pour the mixture into the prepared pie dish, ensuring it’s evenly distributed.
  • Place in the oven and bake for 25-30 minutes, or until the quiche is firm and lightly golden on top.
  • Allow it to cool slightly before slicing. Cut into wedges and serve warm.

Notes

For an added layer of flavor, consider incorporating herbs like dill or thyme into the egg mixture. You can also add other vegetables for variety and nutrients. If you're short on time, frozen chopped spinach works well, just make sure to thaw and drain it thoroughly.
