Ingredients

  • 1 large cucumber Fresh and crisp, forms the perfect outer layer.

Instructions

Preparation

  • In a small bowl, combine the crumbled feta cheese and finely chopped almonds. Mix well until evenly blended.
  • Using a mandoline or sharp knife, thinly slice the cucumber lengthwise to create long ribbons, about 1/8 inch thick.

Assembly

  • Take a slice of cucumber and place a small spoonful of the feta-almond mixture on one end. Roll tightly around the filling and secure with a toothpick if needed.

Dressing Preparation

  • In a separate bowl, whisk together the honey and balsamic vinegar until smooth.

Serving

  • Arrange the cucumber rolls on a serving platter and drizzle with the honey balsamic mixture. Garnish with fresh mint leaves and a sprinkle of black pepper if desired.

Notes

For cheese variations, try goat cheese or ricotta. Add finely chopped walnuts or pistachios for extra crunch. Fresh herbs like dill or basil can infuse flavor into the mixture. Prepare rolls a few hours ahead but add dressing just before serving to retain freshness.
