Instructions

Preparation

  • Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
  • For the crust: In a large mixing bowl, mix together the chocolate cookie crumbs and melted butter until crumbly. Press the mixture into the bottom of the pan firmly. Bake for 10 minutes and let cool.

Cheesecake Filling

  • In a large bowl, beat softened cream cheese until smooth with a mixer. Gradually add granulated sugar and mix thoroughly.
  • Add sour cream and vanilla extract, blending well.
  • Incorporate the eggs one at a time, mixing thoroughly after each addition.
  • Fold in melted chocolate and chopped strawberries gently.
  • Pour the batter into the cooled crust, spreading evenly.
  • Bake for 60-70 minutes until the edges are golden and the center jiggles. Turn off the oven and leave the cheesecake inside to cool gradually for one hour.

Chilling and Topping

  • Transfer the cheesecake to the refrigerator and chill for at least 4 hours, preferably overnight.
  • Once chilled, remove from the springform pan and garnish with fresh strawberries, chocolate shavings, and whipped cream.
