Instructions

Preparation

  • In a small bowl, mix the warm water, pickle juice, sugar, and yeast. Let this mixture sit for 5-7 minutes until foamy.
  • In a large bowl, combine the flour and salt. Create a well in the center and add the foamy yeast mixture along with the olive oil. Stir until the dough begins to come together.
  • Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.
  • Gently knead in the chopped dill pickles and fresh dill until evenly distributed.
  • Place the kneaded dough in an oiled bowl, cover with a towel, and let rise in a warm place for 1 hour or until it doubles in size.
  • Roll the dough out into a rectangle. Brush with olive oil, sprinkle with oregano and garlic powder, and arrange sliced pickles on top. Roll tightly into a loaf.
  • Place the rolled dough into a greased loaf pan. Cover and let rise for another 30 minutes.
  • Preheat your oven to 375°F (190°C). Brush the top of the loaf with olive oil and sprinkle with sesame seeds and poppy seeds. Bake for 30-35 minutes or until golden brown.
  • Allow to cool slightly before slicing.

Notes

Monitor your yeast for freshness and don’t rush the kneading process. Consider adding cayenne pepper or using whole wheat flour for a nutty flavor.
