Instructions

Preparation

  • In a medium saucepan over a gentle flame, mix together the light brown sugar, cornstarch, and salt. Gradually whisk in the milk until smooth.
  • Place the saucepan over medium heat.

Cooking the Filling

  • Keep stirring constantly as the mixture begins to heat up and thicken. It is ready when it starts to bubble and thickens noticeably.
  • In a separate bowl, whisk the egg yolks until slightly frothy. Temper the egg yolks by adding a small amount of the hot mixture while whisking.
  • Return everything back to the saucepan and cook for an additional two minutes, stirring constantly until thickened further.
  • Remove from heat and stir in the unsalted butter, pure vanilla extract, and optional ground nutmeg.
  • Pour the rich filling into the pre-baked pie crust.

Setting the Pie

  • Allow the pie to cool at room temperature for about 30 minutes.
  • Refrigerate for at least four to six hours, or overnight, until fully set.

Serving

  • Just before serving, garnish each slice with whipped cream and a sprinkle of toasted pecans.

Notes

For deeper flavor, consider browning the butter. Optional: mix in chocolate chips or layer banana slices in the crust.
