  • 2 lbs boneless, skinless chicken breasts Juicy and tender pieces of chicken.
  • 1/2 cup sour cream Adds creaminess.
  • 1 box (6 oz) stuffing mix Heart of the dish.
  • 1 cup low-sodium chicken broth Keeps the chicken moist.
  • 1/2 tsp onion powder Enhances flavor.
  • 1/2 tsp garlic powder Adds aroma.
  • 1 (10.5 oz) can cream of chicken soup Thickens the mixture.

Instructions

Preparation

  • Place chicken breasts in the bottom of the crockpot.
  • In a bowl, combine the cream of chicken soup, sour cream, chicken broth, garlic powder, and onion powder. Stir until smooth.
  • Pour the mixture evenly over the chicken.
  • Sprinkle dry stuffing mix on top of the chicken.
  • Cover the crockpot and cook on LOW for 6–7 hours or HIGH for 3–4 hours.

Serving

  • After cooking, shred the chicken in the pot and mix with the stuffing and sauce.
  • Serve warm, garnished with chopped parsley.

Notes

For added flavor, consider including diced vegetables like carrots or celery. For a kick, add red pepper flakes. Use pre-cooked rotisserie chicken if short on time.
