Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • Line a baking sheet with foil or parchment paper for easy cleanup.
  • Remove the stems and gills from each portobello mushroom cap.

Filling

  • In a mixing bowl, combine the chopped lobster meat, breadcrumbs, mayonnaise, lemon juice, Old Bay seasoning, shredded Gruyère cheese, and chopped chives.
  • Mix until all ingredients are well incorporated.

Assembly and Baking

  • Generously fill each mushroom cap with the lobster mixture, pressing it down firmly.
  • Place the stuffed mushrooms on the prepared baking sheet and bake for 18–20 minutes.
  • For an extra crispy top, broil the mushrooms for an additional 1–2 minutes, watching closely to prevent burning.

Notes

Use fresh lobster for the best flavor, or high-quality frozen lobster can work. Feel free to experiment with different cheeses or add minced garlic or diced bell peppers for extra flavor.
